This Apple Pie Quinoa Breakfast Bowl is warm and delicious! Cinnamon and apples with warm almond milk over quinoa is just like apple pie! Vegan and gluten free!
Happy September friends! Does it look like fall yet where you are? Are the trees changing colors yet?
Well since September is like the official start of “fall foods” I decided to make a healthy and simple of course apple pie inspired breakfast!
You have probably already seen my blueberry quinoa breakfast bowl and my raspberry one so it won’t be news when you see I used quinoa in here! Of course you could sub oats if you want! 😉
Now I want to point this out, I know apple pie is usually pretty sweet and sugary so I don’t want the title to fool anyone! This is still a naturally sweetened breakfast bowl free of artificial sugars! The apple and banana with cinnamon are just the perfect amount of sweetness for breakfast in my opinion but of course I always add optional sweeteners for those of you who are totally not game for not adding sugar!
I know I have already said this too, but for anyone who is new around here… I like to cook larger batches of my quinoa and store it in the fridge for up to 3 days so I have it ready on hand when I want to make something like this! Just a prep tip if you are interested! 😉
Okay! What’s makes this so “apple pie” like? Well the almond milk, apples and cinnamon get heated up together and instead of eating a cold apple which is totally NOT like an apple pie! You are eating warm cinnamon sweet delicious-ness! The pecans and raisins in here add the perfect amount of texture… thinking about it while I am typing… should I have titled this apple crisp quinoa breakfast bowl? Since I added the pecans and raisins… I am probably just overthinking this right?! 😉

Super easy (especially when the quinoa is already prepped)
Obviously wayyyy healthier than actual apple pie or apple crisp!

Ingredients
- ½ cup cooked quinoa approx ¼ dry
- ½ cup unsweetened vanilla almond milk I like SILK brand
- ½ apple chopped
- ½ teaspoon cinnamon
- Sliced banana
- Raisins for topping
- Chopped pecans for topping
OPTIONAL sweetener:
- Maple syrup
- Brown sugar
- Coconut sugar
Instructions
- Cook the quinoa if it’s not already cooked, cook it in water plain do not add anything to it.
- Once the quinoa is cooked add it to a bowl. In a separate bowl add the almond milk, cinnamon and chopped apples and give it a stir, place it in the microwave for about 45-60 seconds until warm or hot whichever you prefer.
- Pour the warm almond milk/apple/cinnamon mixture over the quinoa.
- Add toppings, banana, raisin, pecans and more cinnamon.
- If you choose to add a sweetener I would add it to the microwave mixture!
- This recipe serves one but it is easily adapted to serve more!
